Hi. Here are the answers to your questions:
1) Fiber, but I was using cable just a few weeks ago and I had the same issue. I don't think it matters, because as I mentioned above, this is an isolated Moca network. It DOES NOT connect to the point of entry from the cable provider.
2) There are several devices running on the Coax network, but not very many at once. My computer and my wife's computer are connected to it, and we experience interruptions at the same time. The interruption can last up to a minute, and it's exactly like what's described in this post: Random disconnects for 60 seconds twice a day. MOCA LED turns off then on again | goCoax
3) Sure, here is a detailed diagram. It does not show every client, but it shows many of them. Please read this carefully... Connected to the 5-port switch in the diagram are a Roku and a Steam Link. The Steam Link steams games from a PC. When an interruption occurs, it will fail exactly like this post: Drop connection directly on routeur | goCoax. It's different for Roku... when watching videos, it buffers ahead, so the video is never interrupted, but the quality will drop dramatically.
Also, I took a PCAP from my work computer when an outage occurred. Please analyze.
